Quinoa Salad with dried cranberries, onion, tomato, and cilantro- (This one was from a while ago, but I didn't want it to feel neglected...)

A pile of green stuff. I mean, kale chips! I couldn't get a good picture, but they were actually beautiful. AND DELICIOUS. I can't believe I'd waited this long to make them! This will definitely be a reoccurring food item.

A wonderfully delicious dinner of Thom's DELICIOUS mashed potatoes (with basil flowers!), asparagus, mushrooms, yellow squash, and a Gardein santa fe good stuff (And hey, they're the ones who don't capitalize---not me!) which was a chicken-ish burger stuffed with beans and corn. It came from the store. But...I put caramelized onions on top. I was feeling burned out on tofu that night, so when we stopped by the store to get OJ to go with our tequila, we picked up a packet of Gardein. I'd never tried this before, but it was good. I'm usually not much for packaged fake meat, but this had a good texture and wasn't extremely salty like most store-bought mock meat. I would recommend it! Oh, and it definitely stood up to grilling, I never worried about it falling apart for one minute.

Another night, I threw all of the veggies that needed to be used onto the grill and then onto some lettuce. And then onto Thom's tummy because he is much better at taking photos than I am. I'm the shakiest! This was a very good salad.

We celebrated summertime weekendom by having grilled breakfast outside. This was an awesome occasion. We grilled mushrooms, slices of local tomato crusted with cornmeal and nutritional yeast, Gimme Lean sausage, and pancakes. The pancakes were cooked in a cast iron skillet, but for these purposes I think that sure as heck still counts as grilling.

Here is one of our plates. MMM, this was good. Thom is the pancake master, and he is good at what he does. I would've love to've made more mushrooms, but for some reason we only had two left! I wonder why I saved two mushrooms instead of just cooking them the other night... But whatever. I'm glad I at least got to have one! And I accidentally ended up making kind of a lot of sausage, 'cause I mixed it with breadcrumbs to help it be workable enough to put on the grill. It ended up being delicious, so we ate it all anyway!

Here are some things that I've found outside recently:

The awesome purple flower (petunia?) that Thom planted for me, our habenero plant, and my ankles. We also have jalapeños and anaheim chilis, 3 kinds of basil, rosemary, parsley, eggplant, dying tomatoes and dead catnip. Whee!

Okay, I have several things to say. First, that dressing on your mushroom salad looks delicious!!!
ReplyDeleteAnd yes, kale chips are the bomb, although they are one of those foods that narrow-minded types will always make gross-out faces at, but hey: more for us.
The mac-and-cheese also looks so damn tasty. Hooray for bread crumbs!!!
And I like Thom's glasses.
Funny - I always struggle with whether to capitalize a brand or company that doesn't capitalize - because I don't want people to think it was MY error. :) I love mac-n-cheese ever so much. BTW, is the picture above where you live?
ReplyDeleteAHH! I know what you mean now about the adult beverages :) If you're going to make a lot (for say...a party) I would buy cantalope for the guests since it's cheaper :)
ReplyDeleteI can't really say that one thing looks better than the other. It all looks delish! I love pancakes...never thought about cooking them on the grill though. I will def. have to try that out sometime.

ReplyDeleteJennny-In real life I am a grammar enthusiast. I try not to let that seep into my blog too much, or else this would become I chore. I do all of this stream-of-consciousness style, basically, and don't even read it again! Haha. But yeah, many companies have strange and sometimes frustrating spelling and/or grammar. Oh, and the picture at the top of the blog or the pictures in this post? The one at the top is not where we live, but near-ish and somewhere we went camping. I do live on a mountain, though, that is just not a picture of it.

Michelle- Thanks! I absolutely recommend grilling pancakes. You've just gotta have a good pan. It would be great for camping, too...if you wanted to carry around pancake batter or ingredients!

Oh, and I kind of borrowed the quinoa+cranberries idea from the Wegman's salad bar. I dunno if you have that grocery store where you live, but they have quite a few vegan options!
