In the mean time, have some belated and underwhelming Monday Night Dinner photos!
Two Mondays ago was my wonderful mom's first day at a new job. So, this MND was in honor of her. Unfortunately, I forgot to take pictures of the main dish. We had orange flavored grilled chik'n as well as some other things that I don't remember.
I did, however, take a picture of the appetizer and dessert. This soup was so, so good. Grilled asparagus and tomato soup with a little almond milk and nutritional yeast. Smoky, rich, and delicious.

And as you can see here, we also had corn, beer, Earth Balance, and sauce. And salt and pepper. Oh! And over on the left, you will see evidence of a main course. I think that was probably the orange chik'n. Oh well, you'll just have to take my word for it.

For dessert I made chocolate-covered oranges. So. Good. I should've made about fifty more!!! The oranges were so cold and juicy, and the dark chocolate complimented them so well... BRB, running to the orange store! (Just kidding. But I'm thinkin' about it...)

Fast-forward to this past Monday. Here, I only have unattractive camera-phone pics. Again, my bad. Maybe I should threaten to fire myself. Would that be a kick in the butt enough to be a better food blogger? Outlook not so good. Concentrate and ask again later.
The grill wasn't working (Dad has since fixed it) so I had to try to figure out some good summery non-grilled food. I decided on a pasta, 'cause I had some nice tomatoes and greens that I wanted to use. It ended up being what I would call: Roasted Tomato and Swiss Chard Pasta with Miso-Garlic Glazed Tofu and Garden Salad.

...Yeah, that was not the best looking picture. I will leave you with one of the whole table. I think that might feel much nicer.

Perhaps tomorrow I will update with some of the food from this past week that I've been absent. Cannot predict now, but signs point to yes.

It all looks great! Taking photos just takes practice we all get better over time. Chocolate covered fruit is always a winner!

Hard to believe there is Tomato in the soup. Think you could share the recipe? That tofu on the pasta also looks especially appealing.
