Camera Phone Picture Update

I've been kind of down lately, so I'm still making lots of fattening comfort food and generally not caring how that makes me look. So, take that!

Here are some things:

A throwback to mom food of the '90s. Spaghetti pie. It was good.

We wanted to try other kinds of Gardein, so we bought some Chik'n Scallopini and grilled it up. It was good. Served with a spicy homemade BBQ sauce (those orange dots are homegrown habeneros), corn, collards, mushrooms, and homemade cornbread. This was a delicious meal.

We used the other two Chik'n pieces another night to make chicken fingers. I sliced them in pieces and breaded and fried them along with some mushrooms. These were absolutely, hands down the best fake chicken nuggets I've ever made or had. Served with habenero infused collards and mashed potatoes.

Sorry to be boring, but that is all for now. Maybe I will be more interesting in the future when things are less lame! Cheers.

  2. I still haven't tried the Gardein Scallopini, but now that I see your fried version, I must. Looks so good! And love all those habeneros. Spicy food is the best!

    Bianca---Thanks! I hate buying prepackaged things, but the Gardein stuff is just really good. We've tried two or three kinds now, and they're all much better than other store bought fake meats. Oh, and spicy forever!

    SV---These aren't all meals since Monday! These are just camera phone pics of meals in the last two weeks or so. I usually use a regular digital camera for my pics, but when I forget to bring it Thom will use his camera phone. And then, every once in a while, he will email me all of the pics and I will post them. Sounds fun, huh?

  5. First of all, I am sorry to hear you've been feeling down. I'm usually fine in the summer but when winter hits, I will definitely be hittin' the comfort food myself. This does look super delicious. I like your style! And you are right--Gardein rocks.

  8. Multi-pan meals are the ultimate indulgence. I am way too lazy for that but I hope you enjoyed it and are feeling better.

    Spaghetti pie is cooked spaghetti and ricotta+spices (I think. Obv. in my case I used tofu ricotta) in a casserole dish with sauce/cheese/veggies/"meat"/whatever on top and baked until it's crispy on the edges. Cut in slices like a pie. Delicious kid food.
