Grilled BBQ tofu and mushrooms with Swiss chard mac'n'cheese. This was last night's dinner, and it was especially delicious.

Open-faced (homemade) grilled black bean burger sandwich topped with lettuce, tomatoes, caramelized onions, and a spicy sauce. Also corn and Swiss chard mashed potatoes.

Night-time breakfast. Tofu scrambled with Swiss chard, hash browns, and Gimme Lean sausage.

Simple pasta sauce and spaghetti. We didn't have many ingredients this night, so I just made a really simple (but delicious) tomato sauce and served it over some spaghetti.

And here are things that I've made in the past month or two, but not that recently. The vague memories are like a delicious dream.
Grilled tofu, asparagus, and corn. The asparagus and tofu later had hollandaise sauce drizzled over it. The sauce was good---it was my first time trying to make it.

Aaand breakfast corndogs. Yes, I did say breakfast corndogs. Veggie breakfast sausage dipped in pancake batter and pan fried. Inspired by a product seen in the frozen food section of the grocery store in Florida. .....DELICIOUS.

ReplyDeleteI think you have the exact same eating tastes as my husband. All of the BBQ and potatoes and corn and grilling...these are his favorite meals. It all looks great. I love that you added swiss chard to mashed potatoes - I like m.p., but they're a little much of one texture to me. I would like them better adding greens - I'll try it.
ReplyDeleteS.V.- We are living separately at the moment, but do see each other for dinner most nights. Thom gets home from work at 11 pm, so these are all late dinners. Night time grilling is pretty satisfying.
ReplyDeleteJenny- Hello! You should definitely try greens in mashed potatoes. Very delicious. I also put them in mac and cheese and tofu scrambles. Makes just about anything un-bland.
Mmm... that all looks fabulous! I generally don't like mock meats, I'd totally try one of those deep fried corn dogs.
