I am dumb and forgot to take a picture of our home-grown eggplant baby before I cooked it, but I took some of the whole dinner.
I sliced the eggplant lengthwise and coated it in a mix of cornmeal and nutritional yeast and put it on the grill. It was perfectly creamy and tender, and the cornmeal gave it a nice texture. I served this with a grilled piece of tofu and asparagus.

I topped the tofu and eggplant in an extremely delicious pepper and onion sauce I whipped up. Very spicy! There were about 5 kinds of hot peppers in the sauce, including a few from our own garden. I caramelized the sweet, little local onion that we had, threw the peppers in, and simmered it in a little apple cider vinegar and a splash of soy sauce. I wanted to add a dash of nutritional yeast to thicken it, but ended up dumping in way more than I intended...so the sauce became a little beige. It ended up being extremely delicious, though. There will definitely be more variations on this sauce.

I'm not sure what I'm making for dinner tonight, but I will try my hardest to remember to take pictures. I'm really trying, guys. Just really, really forgetful.
That sauce looks amazing--I can't remember reading/hearing anything like it. Did you just "imagineer" it?

ReplyDeleteStacy---Yeah, I just imagineered the sauce. It was kind of like a BBQ sauce but without the tomatocity. Oh, I forgot to add up in the actual post that there is brown sugar in the sauce. I've been doing a lot of sugar/vinegar based sauces. I don't know if that's a real kind of sauce that people make...but it's yummy.
fodfeud---I am sorry that you have to deal with that gross and depressing ordeal. But yes, please don't write off grilling as a whole! It is a WONDERFUL activity when it doesn't involved animal carcasses or bodily fluids.
SV---Hate eggplant?! Man. Well, you're still cool with me. I like you regardless of your (crazy) opinions! :) (jk about being crazy... I will admit there are some things I hate too. Like olives. Just don't like 'em...Weird, I know.)

Hopefully after a few more times in dealing with tofu, I will get to where I know how to fix it better. :o) I am adding you to my blog list! I love reading feedback from everyone.
