A week or two ago, I had some Daiya and wanted to make a veggie melt sandwich...but it turned out that I hardly had any veggies handy, so it became a BLTCA, or a (tempeh) bacon, lettuce, tomato, cheese, and avocado sandwich. Also, we used up the last of two bags of frozen fries---sweet potato and regular crinkley. Not bad for lunch, eh?

I didn't realize how big I was making the sandwich until I put the halves together! This is me about to take the first bite... messy, but SO worth it.

Annnd, this was what our veggie bowl looked like a few days later. We've eaten all of it minus the potatoes and the habenero. But, allll in good time, my dears. All in good time. Spicy purple mashed potatoes, anyone?

Hope everyone's enjoying the weather! Veggies=love. (P.S. We are growing a lot more veggies than just the pepper plants I've pictured here. I'll have to take pictures and post about them soon!)
I love tempeh bacon, tomato, lettuce, and avocado sandwiches, and I bet they're even better with Daiya...because what's not better with Daiya?
ReplyDeleteBTW, Marja you can totally be my boyfriend. Thom can have my boyfriend, Paul.
The stores in my area only started carrying Daiya a month or two ago, so I've only had it once or twice so far---but I can already tell it's awesome.
ReplyDeleteI wonder if male peer pressure could get Paul to eat vegan food? Thom is a very "manly" man and he's vegan. If I'm your internet boyfriend, does that mean you'll make me internet dinner?
