I was feeling a bit burned out on school last Monday, but our tradition is what I look most forward to in the week so there was no was I'd skip it---so I decided to go with a nice pizza. Or two. From scratch. Easy, right?
Haha. But, yeah. We make pizza all of the time so we're beginning to be exprets. This last week I made two. A thin crust for appetizer and a huge one for the main course.
Here's the pre-cooked thin crust. And, oh! I forgot why this was special! Our area groceries just recently started carrying Daiya cheeze, so this was my first time cooking with it! This appetizer had tomato sauce, Daiya, tomatoes, onions, edamame, and half jalepanos for Thom and I. Oh, and the crust was a black pepper and garlic crust. SO good.

Here's a cooked and half-eaten pic. It got so melty! Daiya is pretty damn good. Now I know what everyone is talking about. Oh, and I just cooked this one on foil 'cause I was heating up the stone for the big pizza. This one still got pretty crispy without the stone, so that was good.

So, I was thinking---I haven't posted many messes lately---so here you go! As you can see, the main-course was a pesto based pizza.

And here's an uncooked close-up. When finished, the pizza had pesto, Daiya, artichokes, spinach, onions, garlic, mushrooms, tomatoes, and tempeh.

After broiling. Ta-dah!

Certainly ain't no wimpy pizza. No bends, no flops. It stayed straight, flat, and crunchy. Just the way we like it. MMmm.
And, what's that? Why, yes! It IS Monday again! What's that you ask? Oh! The theme for tonight is citrus, for last week my dad brought 4 hugs bags of grapefruits and oranges back up from Florida! And what am I making, you ask? ...psh! Nice try. It's a secret. See you later to find out!

Gorgeous pizza! Pizza is the one non-vegan food I miss, but Daiya is helping a little with that.
